To Øl was founded by Tobias Emil Jensen and Tore Gynther who during their high school years were able to brew beer in their school. The home brewing continued after high school and in 2010 they were ready to brew their first commercial beer. The word spread fast and their former high school teacher, Mikkel Borg Bjergsø, which by now had started the successful gypsy brewery Mikkeller, insisted that they would brew the first beer with him. And so they did - and it was a success.
After they had been gypsy brewing for some years To Øl opened up the brewpub BRUS in 2016. There they have been able to experiment in a smaller scale. In 2019 To Øl bought facilities in Svinninge, the home of their own new brewery. To Øl aims to make great beer that are full of flavor and character and have gained a huge amount of positive attention for their non-compromises made with the quality brewing style. Their intention now is to brew the best beer in the world.
